The Franklin Street Inn in Appleton, WI has many delicious breakfasts to offer, each morning when you arise after spending a night in one of our cozy and comfortable rooms , you will be treated to one of our amazing breakfast menus . Below is a selection of recipes which are most acclaimed by our guests. Use as many of them as you would like to get a taste of what your stay at our Wisconsin bed and breakfast will be like.

Easy Eggs Benedict

Smoked Cooked Ham Deli Cut Slices
Eggs
English Muffins
Your favorite Hollandaise Sauce Blend.

Toast buttered muffin halves. Keep warm. Prepare Hollandaise Sauce. Keep warm. Grease muffin cups. Line each cup with one slice of ham. Crack one egg into each ham lined cup. Bake approx. 10 min. at 400’. Spread a generous layer of sauce on each muffin half. Remove formed ham with baked egg & set one on each muffin half. Garnish with paprika.

Blueberry Streusel French Toast:

1 lb. loaf French Bread
5 eggs
3 cups milk
3 Tbsp. sugar
2 tsp. vanilla
1 ½ cups fresh or frozen blueberries

Streusel Mixture:
½ cup flour
¼ cup brown sugar
1/8 cup granulated sugar
1 tsp. ground cinnamon
3 Tbsp. butter
1/8 cup pecans

Cut bread diagonally into approx. 1 ½ inch slices. Grease 9 x 13” pan. Place bread slices in pan. Use a whisk and beat eggs, milk, sugar, & vanilla. Pour egg mixture over bread slices. Cover & chill overnight. Before baking, sprinkle berries over bread mixture. Combine above ingredients for streusel mixture and crumble over fruit. Bake uncovered at 350’ for approximately 40 min. or until golden and puffed up. Serve immediately with your favorite maple syrup.











Frittata

6 oz. sweet Italian sausage links, casings removed
2 yellow peppers, cut into 2” x ¼” strips
1 large red onion, thinly sliced
½ cup water
8 large eggs
¼ cup chopped fresh parsley
¾ tsp. salt
¼ tsp. ground black pepper
4 oz. shredded mozzarella cheese

1. Preheat oven to 350’
2. Fry sausage and break it up. Drain.
3. Save above sausage drippings. Add yellow peppers, onion, and, and water to pan and cook about 12 min. until tender and water has evaporated.
4. In a medium bowl, beat eggs, parsley, salt, and pepper until well blended; stir in mozzarella & sausage. Pour egg mixture over vegetables in skillet. Cook over medium heat until egg mixture begins to set around edge, about 3 minutes. Place skillet in oven and bake until frittata is set, about 12 min.
5. Serves 6.

“Just Peachy” French Toast

1 cup brown sugar
½ cup butter
2 Tbsp. water
1 (29 oz.) can sliced peaches
6 eggs
1 ½ cups milk
1 Tbsp. vanilla
1 loaf Texas Toast (12 slices)

Drain peaches & reserve syrup. Heat sugar & butter until melted. Add water & continue cooking until sauce becomes thick & foamy. Pour into 9 x 13” baking pan. Place peaches on caramel sauce. Beat eggs, milk, & vanilla. Dip each slice of bread in mixture and lay a double layer of bread so all twelve slices gets coated. Pour any extra on top to soak in gradually. Refrigerate overnight. Bake at 350’ for 40 min. Loosely cover with foil the last 10-15 min. if browning too fast. Serve with warmed peach syrup. Serves 12 people.

Christmas Rhubarb Soup

2 cups frozen rhubarb
1 ¼ cups water
1/3 cup Brandy
½ cup sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
¾ cup orange juice
2-3 drops red food coloring

Mix all ingredients in 2 qt. saucepan. Bring to a boil. Cover & reduce heat; simmer 20 min. Mash with potato masher. Garnish with a dollop of whipped cream.
Rhubarb Tapioca Pudding

1 cup sugar
½ tsp. salt
2 cups water
½ cup instant tapioca
2 ½ cups sliced rhubarb
1 cup crushed pineapple, drain

In large saucepan, stir together the sugar, tapioca and salt. Stir in rhubarb & water. Cook over medium heat stirring constantly until rhubarb is tender & mixture is thickened. Remove from heat & add pineapple if you wish. Add red food coloring if desired. Garnish with fresh strawberries & whip cream.
Raspberry Delight Parfaits

Mix:
2 pints fresh raspberries
2 tablespoons sugar
3 cups vanilla yogurt

Pour ¼ cup mixture into each of 8 parfait glasses. Next slice bananas to create next layer in glass. Fill glass with mixture. Garnish with kiwi slice and half of a strawberry.
